This is something I love to order out but never thought I would be able to make it at home. However, it was a lot easier than I expected and I had every ingredient already in my pantry. This is a recipe to impress dinner guests, special occasion, or any Tuesday. Defiantly becoming a go-to dish. It does take some preparation but the end result is so good it is all worth it. This pairs great with a garlic n oil pasta or a nice salad.
Ingredients :
- thinly sliced chicken cutlets
-flour
-4 eggs
-3 tablespoons of water
-1/4 cup extra virgin olive oil
-1 lemon sliced
-1/2 cup white wine
-1 cup chicken broth
-4 tablespoons butter
-salt and pepper to taste
First, set up a prep station with a plate with the flour seasoned with salt and pepper.
Next to the flour, a bowl with the eggs and water mixed together.
Coat the chicken with flour then dip into the egg completely covering it.
Quickly add the chicken to a hot pan with oil. Cook for 2 minutes a side the add to a sheet pan.
After all the chicken is cooked add the sheet pan to the oven set at 300 degrees.
Into a dry pan add the lemon slices and let cook for 3 minutes. After the 3 minutes use your spoon and smash the lemons releasing the juice.
Then add the wine and broth and simmer for 5 minutes to reduce slightly.
Take the butter and roll it in flour and add to pan and stir until the butter melts and flour dissolves.
Once the sauce is finished remove the pan from the oven and add the sauce on top and place the lemon slices onto of the cutlets. Let that cook in the oven for 10 more minutes and then it is ready to serve.
